Good question. I guess the company wanted to follow the "true" national identity and thus renamed themselves to translate to a more commercial "Australian" title. Apparently, the "Jack's" follows the name of the guy who created the company, Jack Cowin; although initially the name originated from the pancake mixture product known as "Hungry Jack". Mr. Cowin added the "'s" to sound more possessive of the brand. And quite frankly I think he does. Not once in my 13 years have I seen this "Hungry Jack" pancake mix - and I like pancakes!
